Butter, for the pan (or cast iron skillet) 

– 8 plums (or 6 apples, 6 ripe pears)  

– 3/4 cup ground and lightly toasted walnuts 

– 1/2 cup cup butter 

– 1/2 cup Canadian canola oil 

– 3/4 cup sugar 

– 3 eggs 

– 1 tsp ground sumac 

– 1 tsp vanilla 

– 1 1/2 cup red fife flour (or all purpose) 

– 1 tsp baking powder 

– 1/8 tsp salt 

– 4 tbsp honey 



Pre heat oven to 350 degrees. 

Add the butter, canola oil and sugar to the bowl of the food processor or mixer and process until creamy.

Add the eggs one at a time, and process after each addition, until fluffy. Add the sumac, vanilla, red fife flour, baking powder and salt, and pulse just until the batter is smooth.

Add the ground walnuts and pulse to mix them into the batter.

Add the batter to the pan or cast iron skillet.

Lay the sliced or chopped plums on top.

Bake for 35 minutes. 

When the cake comes out of the oven, brush with the honey. 

Dust with powdered sugar and serve.
